Banana Chocolate Chip Muffins
So, I realized a couple weeks ago [when I accidentally deleted a recipe I had bookmarked and panicked because I had really liked that recipe and I couldn't find it], it might be handy to actually post anything I've made that I like on this blog so I have a backup location for those recipes.
FOR TODAY: BANANA CHOCOLATE CHIP MUFFINS

Recipe:
Ingredients:
1 3/4 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup vegetable oil
1/2 cup soy milk
2 teaspoon vanilla extract
1 cup mashed ripe bananas (I used three bananas)
3/4 cup semisweet chocolate chips
Directions:
In a large bowl, combine the flour, sugar, baking powder, baking soda and salt.
In another bowl, combine the egg, oil, milk, and vanilla.
Stir into dry ingredients just until moistened.
Fold in bananas and chocolate chips.
Fill greased or paper-lined muffin cups two-thirds full.
Bake at 350 degrees F for 22-25 minutes or until a toothpick comes out clean.
Cool for 5 minutes before removing from pans to wire racks.
Definitely moist muffins, but my second time, I think my bananas weren't ripe enough - I generally ripen them in the toaster oven on low heat so they blacken, but I guess I was rushed this time and you could taste a few chunks, which I didn't really like. I also like to top them off with a few chocolate chips each before baking just so they're pretty and extra chocolate-y :D
