Enoki Pancakes

Well, I'm glad it's these Korean pancakes, because they are incredibly tasty and only use a few ingredients! The main frustration is getting my hands on enoki mushrooms, but this is a go-to recipe if I happen to have those and the rest of my pantry is a little bare.
All the ingredients you'll need (plus oil!):
Cleaned, chopped, and minced.

And now, for the recipe. I first saw it on another baking blog (!) and I've duplicated it below:
Korean Enoki Pancakes
Ingredients
1 pack enoki mushroom
1-2 tbsp. minced carrot
1 large egg, slightly beaten
2 tbsp. finely chopped green onion (or more)
2 tbsp. all purpose flour
salt and pepper, to taste
Directions
1. Remove enoki mushroom from its packaging and cut off the root. Rinse under water and pat dry. Cut the mushroom into half, lengthwidth.
2. Add carrot and green onion to enoki mushroom in a wide, shallow bowl, and sprinkle flour on top of all ingredients. Pour in egg and season with salt and pepper.
3. Heat a non-stick pan and add one tablespoon of olive oil. Divide the batter into 6 parts, and pour one part into the pan. Spread it out thinly. Fry till one side become golden yellow, then turn and fry the other side to the same color. Do the same with the rest of the batter.
The first time I made these, I had no carrots, so I just chopped up some cilantro and tossed it in. And being a cilantro fiend as I am... I think I liked that version better. Bottom line, though, this recipe is easily customized!
This time I made it with my dad in the kitchen, and he was quite particular about rinsing the mushrooms: he insisted that they be lifted out of the water I was washing them in and then dried, instead of draining the water out of the bowl, to avoid any lingering dirt at the bottom of the bowl. A tip I will certainly remember for the future! Additionally, I find frying these easier if I add the oil a little at a time - adding a bit more oil after every 2-3 pancakes, for instance - as the pancakes overall came out more evenly cooked this time.
