Twice-Baked Potatoes (with Crab)
I love making twice-baked potatoes. I'll grant that they're time-consuming, but they don't take a lot of skill or ingredients. Pretty much anything goes! This is how I made them today:
I washed a couple of potatoes and pricked them all over with a fork. Then I lined a baking sheet with foil and rubbed the potatoes with some oil and salt. Finally, into the oven at 400F for 45-60 minutes (turning halfway.) To check if they're done, stick a skewer in at an angle. If it goes inside without much resistance, the potato's done.
I dressed up the filling with some canned crab since I'd bought it recently on sale and then realized I had no idea what to do with it. I haven't yet encountered a brand of canned crab that's much like actual, fresh crab (the crab in cans tends to be totally minced through), so I wouldn't ever go out of my way to buy it. But because I had it, I did a little internet research to find a way to incorporate it. I decided to cook some minced garlic and green onions in butter, added the crab, then a splash of milk for moisture, some cheese to add into the mix, and finally salt and pepper to finish it up.
Once the potatoes were done, I cut each in half and scooped out the insides, trying not to break the skins.
Then it was time to mash the potatoes into the crab mixture to finish the filling!
I piled the filling into 3 of the potato skins...
...and then topped them liberally with some more cheese (uncolored cheddar, in this case), green onions, and a bit of pepper. After 15-20 more minutes in a 350F oven:

Typically I don't make these in nearly as elaborate a manner: my basic mix-ins are just green onions and cheese, enhanced with a bit of butter, salt, and pepper. That version is great when I'm short on ingredients; they still taste fantastic!
