Chocolate Chunk Cookies
About a week ago, I was in need of a quick and easy treat to make. I saw this recipe on The Crepes of Wrath, and it's apparently the winner of the Anderson Cooper Cookie Challenge!
The only change I made was using half chocolate chips and half chocolate chunks, as I had some of a large dark chocolate bar leftover that I wanted to use, but only roughly 1 cup's worth. I also found myself not really partial to the salt sprinkled on at the end. If you enjoy the salty-sweet contrast, though, I would definitely recommend going for it!
Chocolate Chunk Cookies
Recipe found here
Ingredients:
1 cup brown sugar
1/2 cup granulated sugar
3/4 cup unsalted butter, melted
1 egg + 1 egg yolk
1 tbsp vanilla extract
2 cups all-purpose flour
3/4 tsp baking soda
1/2 tsp salt
2 cups chocolate, roughly chopped (I used half dark, half semisweet)
Fleur de sel or sea salt for sprinkling if desired
Directions:
1. Preheat your oven to 350F. Beat together the melted butter and both sugars.
2. Add in the egg, mix until combined, then add in the egg yolk and mix again. Mix in the vanilla.
3. In another bowl, whisk together your flour, baking soda, and salt. Gradually add it to the wet mixture, stirring until just combined. Fold in the chocolate.
4. Line your baking sheets with parchment or foil, and scoop the cookie dough in balls onto the sheets. Bake for 12-15 minutes, until lightly golden.
The batch pictured was on the crisp side, but I'd taken the previous batch out of the oven just a tad underdone so they could finish cooking on the sheets - those were divine! I definitely prefer soft and chewy cookies, but I enjoy the fact that these cookies hold up just lovely whether you prefer fall-apart-soft cookies, or cookies with crisp edges!
