Thyme-Roasted Sweet Potatoes & Asparagus w/ Bacon - Thanksgiving 2015 Photo Post II
I had never really used fresh herbs all that often before this Thanksgiving, but thyme is really working out to be one of my favorites! This was a really simple but flavorful way to dress up sweet potatoes. Personally I don't usually enjoy them in sweet applications (e.g. with marshmallows and the like), so this was a great change of pace!

We paired them up with some oven roasted asparagus, topped with some extra bacon we had lying around.
No recipe for these, we just tossed them in olive oil, salt, and pepper, then into the oven at 425ish F until crisp at the tips and tender. The bacon was sauteed with leftover minced garlic and sprinkled over the top.
Since I left these for so late, coming up next - Christmas cookies!
