Matcha Pancakes (aka the neverending parade of matcha!)
Just last week I was trying to find an old recipe that I used successfully many times in the past to make Hokkaido milk bread, using the tangzhong method, that didn't require kneading. I was convinced I had saved the recipe somewhere or posted about it, but alas, I came up empty. I was more or less able to piece together what seems to be a similar recipe, but unfortunately what I believe was the original blog to post it seems to have had their link corrupted, and it no longer shows the right recipe.
All this is just to say why I am reviving this page despite not posting very often... if I made a recipe and enjoyed it, I want to know that I can go to the same place to find it again!
I made these pancakes for brunch one time and loved them - look how thick they are! I've had poor luck in the past getting my pancakes to actually come out thick and fluffy, so I was super happy with this recipe. The green tea flavor is present without being overpowering to the point of bitterness - the perfect balance.
There are a lot of toppings that would probably go beautifully with these (like chocolate maybe?!?) but this time I went with some fresh strawberries, powdered sugar, matcha powder, and maple syrup.

Ingredients
2/3 cup milk
1/4 cup vegetable oil or melted butter (and extra for frying)
1/4 cup white sugar
1 tsp vanilla extract
1 cup flour
2 tbsp matcha powder
1 tbsp baking powder
1/8 tsp salt
Toppings of choice
Instructions
1. In a large bowl, thoroughly whisk together the egg, milk, vegetable oil (or melted butter), sugar and vanilla extract.
2. Add the flour, matcha powder, baking powder and salt. Whisk until combined and the batter comes together. (This is a fairly thick batter.)
3. Heat your pan over medium heat and brush with vegetable oil or butter.
4. Using a 1/4 cup measure or ladle, dollop the pancake batter onto your pan.
5. Once bubbles appear and pop on the surface of the pancake, carefully flip the pancakes and cook for another minute or so.
6. Stack the pancakes and serve hot with butter, maple syrup and whatever other toppings you desire.
