Lazy Chilaquiles with Red Chile Sauce and Eggs
I call these "lazy" chilaquiles because I went ahead and just used old tortilla chips rather than frying up my own tortillas. It's amazing how you can transform something so plain into something amazing! I dressed them up with plenty of cilantro, green onions, avocado, cotija cheese, and fried eggs to turn them into a complete meal.

Ingredients
1 large bag tortilla chips
1 1/2 to 2 cups red chile sauce (I picked up a storebought can)
Garnishes:
Cotija cheese or queso fresco
Cilantro, chopped
2-3 green onions, chopped
Avocado, sliced
Fried eggs
Lime wedges
Instructions
1. In a lightly oiled pan on high heat, add the red chile sauce and let it cook for a few minutes to heat up. Add the tortilla chips to the pan, gently turning them over until all are well-coated with the sauce. Let cook for 3-5 minutes.
2. In the meantime, fry eggs if using.
3. Remove tortilla chips from heat. Garnish with crumbled cheese, cilantro, green onions, avocado, eggs, and lime wedges.
I love that this recipe comes out looking amazing and fancy, even though the actual cooking effort required is so low. This is definitely my idea of a gorgeous breakfast or brunch - I highly recommend giving it a try! One of these days, I'll go the extra mile and see if I can make my own sauce, but until then - storebought will definitely do :)
