Picture Post: Chocolate Dipped Strawberries - Wedding-Style!
Before my sister's wedding, I decided I wanted to try my hand at the bride and groom chocolate-covered strawberries I'd seen floating around online. (I won't tell you how long she's been married so you don't know how overdue this post is...) And here are the results!
To make them, I washed and carefully dried the strawberries (if the surface is wet, the chocolate won't stick.) Then, I melted down some white chocolate since all of them would have a base layer of white chocolate. (You can add a little butter or shortening to smooth out the chocolate if it's too thick.) For the "groom" strawberries, I did a regular dip and then set them aside to solidify in the refrigerator. For the "bride" strawberries, I dipped the two sides at an angle to create a sweetheart "neckline" on one side. (If the dipping doesn't come out quite right, you can use a spoon to encourage the chocolate to cover the right places!)
After all strawberries had chilled enough for their first coat to set, I prepped some dark chocolate for the "groom" strawberries. Dipping the sides in at an angle will create the V to create a "suit" type effect, but be careful! At this point, the groom strawberries will be quite heavy due to the double layers of chocolate. While they set, I piped a tiny bit more chocolate to draw on either a bowtie and buttons, or a necktie. In my opinion, the bowties were easier! For some, I also tried to draw on lapels on the side, but in retrospect, I don't think those were necessary.
For the "bride" strawberries, I melted a little bit more white chocolate and piped random swirl and dot designs to emulate flourishes on the "dress." For some, I also went ahead and piped some dots for a "necklace" effect :) I also tried to use granulated sugar to dust the swirls on some of them for some texture, but I didn't really like how those turned out, so I wouldn't recommend it.
Overall, definitely a time-consuming way to make chocolate-dipped strawberries, but they are so cute! Certainly worthwhile for a special occasion :) Not to mention delicious as well!
