Chicken, Enoki Mushroom, and Napa Cabbage Stir Fry
Picture post!
At one point, I had all these ingredients in my refrigerator and wanted to throw them together somehow.
So I started with oil in a pan and the ginger and green onion for flavor, then added in the cubed chicken. After that, I removed the chunks of ginger and onion and then put in 4 small packs of enoki mushroom, followed by a pared down chopped head of napa cabbage. Altogether, the vegetables contributed to making the dish much more watery than I had intended, so I drained some off at the end. For seasoning, I used salt, white pepper, and a bit of five spice powder and thinly chopped green onion at the end.
It was my first time cooking napa cabbage, so I hadn't really anticipated the water content. Overall, it made for a quick dinner. I would also lower the temperature if I made this again, as the chicken emerged overcooked this time. Things to keep in mind for next time!
