Pico de Gallo and Guacamole
Pico de gallo is one of the prettiest things to make, and mixing it with avocados makes an easy guacamole.
Here are the components:
Onion
(These were so strong I ended up wearing swimming goggles to chop them... worth it.)
Jalapeno
If you can handle the heat, keep the ribbing and seeds in. I don't like terribly spicy things, so I clean the centers out completely.
Cilantro
I loooooooove cilantro. There's a lot here.
Tomato
I scooped out some of the really liquid-y, seedy parts so there wouldn't be too much liquid in the pico overall.
Throw everything together (in a super classy tupperware)...
...and add some lime juice and salt!

Yum!
